Source for our Trees
Our olive trees come from DaVero Farms, which is located in the Dry Creek Valley of Sonoma County and is a certified organic farm. DaVero’s cuttings come from exceptional olive trees in an ancient olive grove in the hills to the east of Lucca, in the heart of Italy’s Tuscan countryside. The trees are more than 800 years old, and the farm has been in the same family since the 1400s! DaVero selected that grove because its distinctive clones create an oil with wonderful flavors.
Olive Grove
We planted these trees in 2002 in the sandy, well-drained soil of Ivo’s Vineyard in American Canyon, set in the southern tip of Napa Valley, home to our Chardonnay, Sauvignon Blanc and some Merlot vines. Located near San Pablo Bay, which spills into the San Francisco Bay, the vineyard is cooled by maritime breezes and fog, which allow the olives to slowly ripen to develop complex flavors. We farm all of our land naturally, without artificial pesticides or herbicides, and the olives are certified organic.
Harvest
We keep the olive trees pruned low enough that we can hand pick the olives, unlike the vast majority of olives that are harvested mechanically, which often damages the fruit. Following the traditional Tuscan way, we hand harvested the entire field blend at once, rather than the harvesting each variety at different times, resulting in more interesting and delicious tasting oil. In December, we hand harvested and immediately cold pressed the olives at The Olive Press in southern Sonoma. The olive was hand bottled without filtering at the winery.
